Ingredients:

3 figs, 2 sliced to be placed on the top of the cake and 1 chopped up to mix through batter

3 eggs

150g butter, melted, plus extra for greasing

3/4 c almond flour

3/4 c oat flour (or blended oats works)

1/2 c raw sugar

1/2 tsp cinnamon

1/2 c self raising flour

1/4 c desiccated coconut

3/4 c natural yoghurt

1/4 c flaked almonds

2 tbsp maple syrup

Dollop cream or yoghurt for serving

Method:

  1. Preheat oven to 160 degrees fan forced. Grease 2 (yes this recipe make 2, one to give away?) small tart/cake tins. I used 2 x 19cm cake/tart tins.

  2. Mix almond flour, oat flour, sugar, cinnamon, self raising flour and desiccated coconut together in a bowl.

  3. In another bowl, whisk eggs and melted butter together, then add the dry ingredients and yoghurt and fold through until combined. Mix in the chopped figs.

  4. Pour the mix into the prepared cake tins then decorate the top with the sliced figs and flaked almonds. Drizzle the maple syrup over the top.

  5. Place the cakes in the oven and bake for 30-40 mins or until a skewer comes out clean. Allow cakes to cool for 20 mins before removing from cake tin.

  6. Serve with yoghurt or cream and an extra little drizzle of maple syrup if you like. This cake is best enjoyed warm and fresh as the edges come out nice and crunchy.
